柳原尚之が、６月２７日に発売された小泉幸道先生著の『酢大全』の酢コラムに寄稿しています。
「江戸時代の酢ってどんな味」というタイトルで、江戸期の食背景や酢料理、また、江戸期の酢の再現実験についても書きました。
酢についてかなり学べる一冊です。

「酢大全」（“All About Vinegar”）
Naoyuki Yanagihara contributed to the vinegar column in 「酢大全」(All About Vinegar), a book authored by Professor Yukimichi Koizumi.
Under the title “What Did Vinegar Taste Like in the Edo Period?”, he writes about the culinary background of the Edo era, vinegar-based dishes of the time, and even experiments to recreate Edo-period vinegar.
This book is a great resource for learning deeply about vinegar. (Currently available only in Japanese.)
